Shrimp Curry recipe

Ingredients:

2 tablespoons of olive oil.
1 sm red onion, chopped.
1 tablespoon of ginger.
1 tablespoon of mild curry powder.
2 clv garlic, finely, chopped.
2 tomato, diced.
¾ cup of raisins.
½ teaspoon of salt.
½ teaspoon of black pepper.
14 large shrimp.
½ cup of frozen peas.
½ cup of fresh coriander, chopped.
1 yellow pepper, diced.
½ cup of almonds, sliced.
1 6 oz can coconut milk.
1 firm banana.
½ cup of stock.
½ cup of plain yoghurt.

Preparation Instructions:

In a deep sauté pan heat the olive oil.

Add the ginger, onion, curry powder and garlic and simmer for a few moments.

Add the tomatoes, raisins, salt and pepper.

Simmer for ten further minutes, stirring occasionally.

Add the shrimp and cook until the color becomes pink.

Add the the peas, coconut milk, yellow pepper, banana, stock, yogurt and coriander.

Cook for a further five minutes.

Add sliced almonds as a garnish and serve.
